Marshmallow topped muffins!

It's frosty and cold outside, and you just want to stay in, have a cuppa, snuggle up, and have something nice. So these cute little marshmallow topped muffins are great!
 
I've had the pictures in my folder for a while now, and the cakes have been eaten and enjoyed! I thought today would be a good day to share a baking post with you.

You will need:


  • 8oz of self raising flour
  • 8oz of stork, or any other soft spread. I'm using Tesco's own soft spread as you can see, and it works just fine!
  • 8oz of caster sugar
  • 1 egg
  • A splash of milk
  • 1 teaspoon of baking powder
  • 2 teaspoons of vanilla extract
To Decorate:
  • Icing sugar
  • Mini marshmallows.

Firstly, put all your dry ingredients into your mixer. (flour, sugar, baking powder)


Melt your butter, and add all your wet ingredients (melted butter, egg, vanilla, and splash of milk), and mix.


Make sure all of it is mixed and there's no dry ingredient left.
 

Grab a tablespoon, and pop 1 into each of your muffin cases.
Now its time to bake in an oven preheated to 180 degrees, for around 20-25 minutes.
But keep an eye on them!
 
 
When they are springy in the centre, and a golden colour, they are ready to come out of the oven, and be aloud to cool for at least 30 minutes before icing.
Then, your ready to decorate!
Obviously you can decorate these however you like, but to give a bit of a different look, I decided on mini marshmallows. Which, I must say was a yummy treat to have on top!
 
 
And there we have it. My mini marshmallow topped muffins!
